Who makes it?

Villa Conchi is a Cava from the Galarreta family, a tribute to the family's matriarch, Conchi. The winery's history in premium wines began in 1993 when Javier Ruiz de Galarreta, Conchi's son, started forming alliances with quality winegrowers in Rioja Alavesa. He later expanded this vision to other regions, including Catalonia, where he sought a partner to produce a fresh and elegant sparkling wine. The vineyards are located in the Alt Penedès region near Vila Rodona, Tarragona. Tragically, Conchi passed away in July 2009 and was never able to taste the wines that now bear her name.

How is it made?

The Villa Conchi Cava is made from a blend of four grape varieties: 30% Xarel-lo, 30% Parellada, 30% Macabeo, and 10% Chardonnay. The grapes are harvested at night to preserve their freshness and prevent premature fermentation. They are quickly transported to the cellar, refrigerated, and then fermented separately at a constant 16°C to retain their primary aromas. After fermentation, the musts are blended and bottled with a mixture of yeast and sugar to initiate a second fermentation. The bottles are aged in underground cellars at a consistent 15°-17°C, where they remain in contact with the lees for a minimum of 12 months, earning the wine the "Cava de Guarda" classification. Finally, the sediments are removed, and the expedition liqueur is added.

What does it taste like?

This Cava presents a brilliant green and gold color with fine, elegant bubbles. On the nose, it offers good intensity with notes of fruit and toasted nuances. The palate is fresh, warm, and pleasant, with a vibrant fruit sensation that leads to a round, long finish. This versatile sparkling wine is ideal as an aperitif and pairs well with a variety of foods, including Spanish tapas, salads, risotto, and light fish or seafood dishes. It also complements sheep's milk cheese particularly well.
