Who makes it?

Back in 1831, Bernard Bichot decided that selling world-class Burgundy was a much better use of his time than, well, anything else. Thus, Maison Albert Bichot was born in Beaune, kicking off a family dynasty that has been making wine geeks swoon for nearly two centuries. Today, the energetic Albéric Bichot is at the helm, having revitalized the house into a powerhouse of terroir-driven excellence. While some families just pass down old watches, the Bichots pass down legendary estates like Clos Frantin and Domaine du Pavillon, ensuring that every bottle is backed by generations of Burgundian expertise and a very healthy dose of French heritage.

How is it made?

Technical director Alain Serveau and vineyard guru Christophe Chavel treat their vines like royalty—no fertilizers, plenty of plowing, and a strictly hands-off approach to chemistry. The grapes for this Côte de Beaune red are handpicked from sun-drenched, east-facing slopes where calcareous clay soil does all the heavy lifting. Once in the cellar, the fruit undergoes a 21-day fermentation in temperature-controlled conical oak vats using only natural yeasts. To finish it off, the wine spends up to 16 months lounging in French oak barrels, with just enough new wood to add sophistication without masking the grape's true personality.

What does it taste like?

On the nose, this wine is more aromatic than a Parisian bakery, offering a delicate bouquet of ripe cherries and raspberries kissed by a sophisticated hint of smoke and just a whisper of licorice. Take a sip, and you’ll find a wine that is as well-rounded as a retired philosopher, balancing plush fruit with a structure supported by silky-fine tannins. It’s harmonious, elegant, and finishes with a grace that lingers long after the glass is empty.
