The story of Maison Albert Bichot isn't just a history lesson; it’s a liquid legacy that began in 1831 when Bernard Bichot decided that Beaune needed a serious upgrade in the refreshment department. Since then, the family has been passing the torch (and the corkscrew) down through generations. Today, the energetic Alberic Bichot—who has been revitalizing the business since his debut in the mid-60s—oversees a collection of prestigious domaines across Burgundy. Whether it’s the icy slopes of Chablis or the sun-drenched plots of Mercurey, the Bichot name is synonymous with high-end Burgundy wines that honor their roots while keeping a firm, stylish foot in the modern era.

How is it made?

Hailing from the Domaine d’Adélie in the Mercurey appellation—a region named after the Roman god Mercury—this Chardonnay is truly divine. The Champs Michaux plot sits on a high-altitude plateau, where 20-year-old vines struggle beautifully through calcareous clay and stubborn limestone rock. Technical director Alain Serveau and vineyard guru Christophe Chavel treat these grapes like royalty: they are handpicked and fermented using natural yeasts in wooden vats. To ensure the fruit stays the star of the show, the wine is aged on fine lees in oak barrels (only 15 to 20% new wood) for 12 to 14 months, resulting in a Mercurey white wine that is as meticulously crafted as a Swiss watch, but significantly more fun at dinner parties.

What does it taste like?

On the nose, this Albert Bichot Mercurey offers an elegant bouquet of white-fleshed fruits—think crunchy pears and orchard blossoms—with just a discrete, whisper-thin hint of oak. On the palate, it delivers a mineral-driven punch followed by a silky, lingering finish that asks for "just one more sip."
