Tenute Ca’Botta call themselves “an Italian innovative winery that specialises in making dry wines from dried grapes”. We call them a bit crazy!
Even their most basic wines are made using a technique called apassimento. After the grapes are harvested they are set out on wooden slats in a temperature controlled warehouse to allow the grapes to dry out. This concentrates the sugar and flavour - great for big full bodied wines.
However it also means it can take double the amount of grapes to make one of their wines - their accountant must have a stressful job!
Based in in Valpolicella DOC, Veneto, in the northern part of Italy, Ca'Botta is also known for combining winemaking innovations (they have developed their own patented tank Fermentino Ca'Botta®) with a mix of traditional winemaking techniques that gives exceptional balance to the wines.

Winemaking
Made from a selection of the best grapes, collected strictly by hand and under careful quality control. The harvest lasts from the end of September to mid-October. The collected grapes are carefully placed in the net boxes and dried with fresh air from outside, ventilated with mountain air from the mountains. The grapes with a proportion of 50% are pressed in January. As a result, each bottle contains 2.2 kg of fresh grapes. Winemaking: Maceration and fermentation take place in the Fermentino Ca'Botta® stainless steel tanks using a patented process. The maceration period is 10 days at a temperature below 8ºC, the fermentation is 30 days at a temperature below 20ºC. After fermentation, the wine is aged in American oak barriques for 12 months. The wine then rests for 12 months in stainless steel tanks and a further 12 months after bottling.
Tasting Note
Dense and very concentrated wine, with a very deep red, almost black color. The olfactory note starts with powerful and incredibly long tones of blackberry and cherries, topped with green pepper, dark chocolate, thyme, rosemary, meadow flowers, some honey- herbs and honey, with a smoke finish. The taste is as dense and rich as the bouquet, with the bitter notes of almond liqueur in the finish. This is a perfectly balanced and very memorable wine
