Who makes it?

A lesser known estate in Montalcino, though one keen to make a name for itself, Cava d’Onice lies just to the east of Montalcino in the Val d’Orcia. Simone and his father Valter Nannetti’s wine journey started with the Colombaio farm in 1995. Then in 2005, Simone and his family established Cava d’Onice, a tribute to a nearby Etruscan onyx quarry.

This is very much a family affair and an estate to watch closely!

How is it made?

The Sangiovese Grapes come from extremely small plots at up to 350m altitude.

The grapes are fermented over a month for maximum extraction before ageing in large french & slavonian oak for 3 years, with a further 2 years ageing in bottle.

What does it taste like?

Intense aroma, where the hints of red ripe fruit, especially plum and blueberry, leave room for complex mineral and balsamic notes.


Mouth: very balanced in the mouth, with solid and balanced body. The tannic structure is well blended to the other components. Final of considerable length.
