Who makes it?

A lesser known estate in Montalcino, though one keen to make a name for itself, Cava d’Onice lies just to the east of Montalcino in the Val d’Orcia. Simone and his father Valter Nannetti’s wine journey started with the Colombaio farm in 1995. Then in 2005, Simone and his family established Cava d’Onice, a tribute to a nearby Etruscan onyx quarry.

This is very much a family affair and an estate to watch closely!

How is it made?

A blend of 85% Sangiovese with 15% Cabernet Sauvignon, Cabernet Franc & Merlot.

Fermentation is in a combination of stainless steel and cement tanks with ageing in old oak casks.

What does it taste like?

Fruity with ample notes of marasca cherry and blueberries. It has a good intensity
