Product Profile
The Pabiot family have been making wine at Les Loges in the Loire Valley since the early 1900sAt the end of the 19th century and at the beginning of the 1900s. Jean Pabiot, the third generation, was 14 years old in 1944 when he began to work in the vineyard. All work was manual back then, with the support of donkeys (the first tractor was bought in 1958).
Today the winery is run by Alain Pabiot and his son Jérôme. The winery covers 30ha with 30 different plots across 5 districts of the Pouilly-Fumé appellation. The Domaine is named after the soils of the area - clay limestone with white limestone pebbles known as "caillottes". The area is also known for soils containing marl with small, fossilised oysters (kimmeridgian) and flint.
The winery has received Terra Vitis and HVE certification for its commitment to biodiversity and sustainability.
Winemaking
Grapes are destemmed before a short pre-fermentation maceration. The wine ages on the lees for one year before release
Tasting Note
Spicy on the nose with a slightly fuller palate from the lees ageing. A mix of green fruit with some riper peach notes and a fantastic minerality
