From the crisp northern reaches of Chablis to the prestigious Côte d'Or, the estate manages legendary domaines like Long-Depaquit and Clos Frantin. How is it made?

"Vaillons" takes its name from the Latin vallis (small valley), but there is nothing "small" about the craftsmanship here. Sourced from the prestigious Chablis Premier Cru hillsides, specifically the clay-rich "Epinottes" parcel, these 46-year-old vines dig deep into ancient Kimmeridgian marl to pull up that signature mineral punch. Technical director Alain Serveau treats these grapes like royalty, ensuring they are handpicked and fermented primarily in stainless steel (90%) to keep things snappy, with a cheeky 10% touch of old oak for texture.
