Who makes it?

Founded in the historic heart of Beaune in 1831, Maison Albert Bichot is a cornerstone of Burgundian winemaking. Established by Bernard Bichot and passed through generations of the Albert Bichot lineage, the estate is currently guided by Managing Director Alberic Bichot. Since taking the helm, Alberic has revitalized the family business by focusing on a prestigious collection of domaines, including the renowned Domaine du Pavillon in the Côte de Beaune. Today, the maison is celebrated for its commitment to quality and authenticity, operating specialized vinification centers across the region to ensure every bottle reflects the true heritage of Burgundy.

How is it made?

The Aloxe-Corton Premier Cru "Clos des Maréchaudes" is a jewel within the Domaine du Pavillon portfolio. This 2-hectare monopole—a vineyard owned exclusively by one producer—boasts a fascinating history dating back to the 13th century. Once a marshy area near the Lauve River, extensive drainage transformed this sun-drenched, east-southeast facing slope into a premier viticultural site. Under the care of vineyard manager Christophe Chavel, the soil is ploughed without the use of fertilizers. Technical director Alain Serveau oversees a precise vinification process where the hand-harvested grapes are fermented in temperature-controlled wooden vats using natural yeasts. The wine is then aged for 14 to 16 months in oak barrels, utilizing 25% to 35% new wood to perfectly balance structure and fruit.

What does it taste like?

This Aloxe-Corton Premier Cru offers an intense and captivating bouquet, lead by vibrant aromas of cherry, raspberry, and blackberry. These fruit-forward notes are elegantly layered with sweet spices that, with careful cellaring, evolve into complex hints of tea and cocoa. On the palate, the wine is full-bodied and supple, showcasing beautifully velvety tannins and a remarkably long, aromatic finish. For the best experience, serve at 16-17°C alongside roasted beef, duck, or game. It is particularly exquisite when paired with a beef fillet in a spice crust or a selection of medium to strong cheeses. This wine possesses an aging potential of 5 to 7 years, allowing its sophisticated character to deepen over time.
