Who makes it?

In 1975, legendary vintner and American wine pioneer Josh Jensen looked at the remote, windswept Gavilan Mountains of California and thought, "Yes, I shall build a wine empire right here where the wild things are." He founded Calera (which is Spanish for "lime kiln," not "where we hide from civilization") and began planting vines in Mt. Harlan’s stingy, limestone-rich soils. While the local climate is notoriously cool and arid, it turns out those stubborn vines absolutely love the drama. Today, under the watchful eye of winemaker Mike Waller, this iconic gravity-flow winery is revered globally for producing California Central Coast wines with unmatched purity and just the right amount of mountain attitude.

How is it made?

Crafting a masterpiece requires a little bit of patience and a whole lot of French oak. This particular 100% California Chardonnay source its grapes from the finest coastal vineyards across San Luis Obispo and Monterey County, where the ocean breezes keep the grapes chilly and vibrant. Once harvested, the juice undergoes 100% malolactic fermentation—the fancy science term for turning sharp acids into velvety smooth textures. It is then aged for 10 months in 100% French oak (10% new and 90% neutral, because balance is everything), resulting in a 14.5% ABV white wine that is as structured as a luxury watch but goes down way easier.

What does it taste like?

On the nose, this energetic Central Coast Chardonnay hits you with a vibrant bouquet of Meyer lemon, juicy white peach, and fragrant honeysuckle—essentially spring in a glass. Take a sip, and the palate throws a tropical party where zesty citrus and ripe pineapple mingle flawlessly. It strikes the perfect balance between creamy richness and a bright, underlying acidity that adds serious poise and energy.
