Who makes it?

The Domaine du Carrubier has been a family estate since 1974. The domaine covers 88ha, 25 of which are classified AOP Côtes de Provence, which sit close to the cooling influences of the sea, which help to keep the acidity in the grapes that is vital for refreshing rosé.

The grapes are grown using sustainable practices - spraying is kept to a minimum and fertilisers are organic. Manual cultivation is used to maintain the soil. This allows the vines to develop deep roots into the bedrock. The winery makes a collection of red, white and rosé wines, with the rosé reaching international renown.

How is it made?

Grapes come from a sloped vineyard, a few kilometres from Hyères harbour, down the cost from Saint-Tropez. The cool winds from the sea balance the hot sun and the schist soils provide excellent drainage. The grapes are hand harvested and sorted for quality in the vineyard.

At the winery, the grapes are destemmed and crushed with a very short maceration on the skins. The juice is pressed off and covered with inert gas before fermenting at 17°C in stainless steel.

What does it taste like?

Red berry is the main component (raspberry) but look out for some traditional white wine flavours or red apple, citrus and floral notes. This is party wine!
