Founded on a centuries-old tradition, Tenuta Ulisse is a leading winemaking estate in Abruzzo, Italy. This modern winery has embraced the rich history of the region while pioneering new techniques to unlock the full potential of its unique terroir. Their dedication to indigenous grapes like Passerina, Montepulciano D'Abruzzo, and Pecorino places a contemporary spin on ancient varieties, making them a premier producer of fine Abruzzo wines.

How is it made?

This distinctive white wine is made from the Passerina grape, an ancient variety whose name, meaning "little sparrow," hints at the birds' fondness for its berries. To preserve the grapes' purity and character, the winemaking process is meticulously controlled. Whole grapes are chilled in a cooling tunnel to allow for a brief period of cold skin maceration. After destemming, the grapes are gently pressed in a low-oxygen environment, followed by a cold static decantation. The wine is then fermented in inert stainless steel tanks at a controlled low temperature to maintain its fresh, delicate profile before being aged in stainless steel.

What does it taste like?

This wine presents a delicate straw-yellow color with light green highlights. The aroma is intensely fruity, with notes of peach, apricot, and grapefruit, complemented by floral hints of wisteria and lime. Over time, a distinct minerality emerges on the nose. The palate is defined by a clean, flinty character with crisp acidity and ripe, almost melon-like fruit flavors. Its intense and mineral qualities make it an excellent partner for fish entrées, flavorful raw fish, shellfish, and all manner of fish dishes. It pairs particularly well with sushi.
