This particular wine is crafted from a blend of Merlot and Montepulciano grapes, grown in vineyards that are 15-20 years old. The soil is deep and finely-textured, with a clayey surface layer and a high calcium content. The winemaking process is meticulously controlled to preserve the grapes' delicate characteristics. It begins with chilling the whole grapes in a cooling tunnel for immediate temperature drop and cold skin maceration. After destemming, the grapes are softly pressed in a low-pressure, inert environment before undergoing a cold, static decantation for 24-48 hours prior to fermentation.
